I used to make this filling as a stir-fry and serve it over brown rice. That’s always a great option, but at some point I realized that I really like the fresh flavor of the lettuce leaves wrapped around the earthy mushroom filling. As with the White Bean Lettuce Wraps, I often simply put out a platter of crisp lettuce and the filling and let my guests fill them and just fold them in half to eat right away. Makes 8 wraps; about 21/2 cups filling.—DS -

I make lettuce wraps whenever I want a fresh, quick meal without a lot of bread. Plus, the cool crunch adds a dimension that makes it more fun to eat than a regular bread sandwich. You can form these ahead of time, but they are also really fun to serve so that people can form their own wraps. Place the bowl of white bean salad alongside a platter of crisp, fresh lettuce leaves, and you and your guests can compose and eat them on the spot. Makes 8 wraps; about 3 cups filling. -DS
