The turmeric in this scramble gives the tofu that yolk-yellow look, while the peppers and onions add texture and flavor. It’s a quick and easy breakfast that goes nicely with a fruit salad and whole-grain bread or grits.

Pretty much any fruit dessert I make lends itself to swapping out whatever fruit I “usually” use for whatever fruit is in season, and therefore most delicious at the time. This recipe is no exception. While any individual berry may only be fully in season for a few weeks, the overall berry season is nice and long, with blueberries, raspberries, strawberries, and blackberries all coming into season at slightly different times. Feel free to use whatever looks and tastes best to you right now! Makes about 12 (1/2-inch-thick) polenta slices and about 2 cups Compote—DS

When I have a little extra time to make a hearty breakfast, I often make these burritos. For a change of pace, try a couple of medium, red-skinned or Yukon Gold potatoes in place of the sweet potato, and if you have it around, toss in 1/4 cup of chopped fresh basil. Yum! Makes 4 burritos; about 6 cups filling —DS

Smoothies are great for breakfast because they come together quickly, taste great, and are full of whole-food goodness. Be sure to use bananas that have brown spots on their peels; these are truly ripe and will taste best. Also feel free to use this recipe as a jumping off point and use whatever fruit you love or have handy. Sometimes I like to add chopped ripe mango along with the berries. Makes about 3 cups.—DT

This is a year-round recipe—just change the fruit according to what’s available in your produce section, or at the market, or even in your freezer. Fresh or frozen berries of any kind are great, as are diced apples or pears (don’t defrost the fruit before using—just toss it in frozen). You can even combine fruits, such as diced pears and blackberries, mixed berries, or peaches and strawberries. And one final, important note: The main difference between the fruit crisp I eat for dessert and the one I eat for breakfast is the time of day I eat it! Makes one (8 × 8-inch) pan—DS

My mom made a version of these savory pancakes for dinner when I was a kid. My updated version is healthier, but no less delicious— and now I enjoy them for breakfast, too. For best results, don’t try to flip the pancakes until they are thoroughly crisped on the underside; only then will they release from the pan easily. Makes about 10 pancakes. —DS

Oatmeal is one of my favorite breakfast foods. It is quick to prepare and easily adaptable to my ever-changing moods—some days I want it with fruit, some days I want it plain, and sometimes I want a little bit of everything in it (that’s when I add all of the add-ons listed here!). This basic recipe is all you need to get started—add as much or as little of the extras as you like. Makes about 1 1/2 cups.—DS

You might think it’s difficult to get light and fluffy whole-grain pancakes, let alone without adding oil to the batter. I am happy to be the one to tell you that it’s actually as easy as making this recipe! Makes about 12 pancakes.—DS

This hearty dish is easy to prepare ahead of time, which makes it ideal for holiday breakfasts and a good option to serve for brunch. When you’re ready to serve, simply reheat the potatoes and spoon them on top of toast or roll up in tortillas. To make it a bigger meal, serve it with a side of steamed greens or vegetables or with a salad. Makes about 6 cups scramble—DT
